Outlook is garbage. Everything Microsoft does is garbage and consumer hostile, except for visual studio code. Anyone who’s used Google business apps knows this. Teams is such an unproductive joke I refuse to work for any company that uses it. It’s evidence a company is cheap and values cost cutting more than efficiency.
I had a family 365 account to backup my parent’s shit. Even though their PC’s were logged into their fucking Microsoft accounts, and backed up to OneDrive, Outlook displayed ads and couldn’t be linked to their subscription without changing their account emails. Ads were also re-inserted into their OS, even though I already ran multiple scripts to disable them all previously. Complete joke. Cancelled that shit.

You don’t “give” your *biometrics to any of them. Your biometric data is used to encrypt and store each services password hash or auth token on your device.
*At least when it comes to login authentication. Nothing stopping them from acquiring your biometric data from a hundred data brokers.

Standard Notes went out of their way to make it harder to self-host extensions a couple years ago, which IMO was pretty tasteless on its own.
I didn’t dig into this change exhaustively, but it looked like the old approach wasn’t very secure or scalable?
They could have charged for the convenience of providing a syncing server with extra storage, but instead they were basically repackaging and selling subscriptions to JavaScript code which was mostly made by third parties who weren’t even aware Standard Notes was using their stuff.
I dunno if you’re aware, but 95-99% of the Javascript that has ever run in your browser is open source frameworks or packages, or their sub-dependencies, or their sub-dependencies sub-dependencies, ad infinitum… That’s how open source came to dominate the web!

As in, you can no longer load the web app and point it at your own server?
“FOSS” only means so much when they dictate what goes into the source code. Unfortunately.
All FOSS projects have a team of dictators that decide the direction of the project and what gets merged. If you don’t like it, you can fork it or move to another product.
I’m not a huge fan of SN, but nothing you described is different to Proton, who don’t let you use your own servers with any of their clients, and have no extension functionality whatsoever.
It sounds like they were unnecessarily courting legal trouble with how they digitised and released records during the pandemic, but why are they wrong here?

All you need is to use ZFS or BTRFS locally to prevent master version bitrot and provide failover/redundancy, manually sync that to a separate “offline” HDD periodically, then setup a simple pi with tailscale + HDD at a family member or friends house, and rclone all your data to it (encrypted) as a cron job every night or week. This performs the function of a cloud provider (offsite backup); alternately, just manually sync the offline HDD once a month.
With this approach you’re covered for accidental deletion, hard drive failures, bitrot, ransomware, and fire; possibly many natural disasters, depending how far away the offsite is.
Then you can just keep your most important data E2E encrypted in 1 or 2 cloud storage providers.
